A Garlic Triple Whammy


1a. Toasted Garlic: Toast unpeeled garlic cloves.
1b. Peel and sliver the cloves and insert the slivers into slits cut into the roast.

2a. Garlic-Salt Rub: Combine minced garlic with herbs and salt.
2b. Rub garlic salt over roast and refrigerate at least 4 hours.

3a. Garlic Paste: Poach halved garlic cloves and herbs in oil.
3b. Strain garlic and mash into paste. Rub garlic paste over browned roast.
